Oat Date Crumble Bars

For the filling

  • 2 cups chopped dates

  • 1 cup water

  • 1/2 cup coconut sugar

For the crumble layer

  • 3 cups rolled oats (can be gf)

  • 3 cups flour (can be gf)

  • 1 cup honey

  • 1 cup coconut sugar

  • 1 tsp baking powder

  • 1 1/2 cups unsalted butter (can be vegan)


Step 1

Preheat oven to 350. 

Step 2

Place filling ingredients in pot over heat. Boil and stir constantly. Continue until gelatinous consistency is attained. Do not burn!

Step 3

Mix crumble layer ingredients until well incorporated. Press two-thirds of the of the crumble into the bottom of a greased 9″ x 13” pan. Bake for 12 minutes.

Step 4

Remove from oven. Pour date filling on top of the freshly baked bottom layer. Sprinkle remaining crumble on top. Bake for 30 minutes.

Step 5

Allow bars to cool before cutting into squares. Store in fridge.
