Cinnamon Roll Banana Bread Donuts

Ingredients

For the donuts

  • 1/2 cup cashew butter

  • 1/2 cup soaked medjool dates (we'll explain below)

  • 2 ripe bananas

  • 1/2 cup gf oats

  • 1/2 cup oat milk

  • 1/2 tbs baking powder

  • pinch of salt

  • 1 tbs maple syrup

  • 1 tsp vanilla

  • 1 tsp cinnamon


For the cinnamon swirl

  • 2 tbs oat flour

  • 2 tbs brown sugar

  • 1 tbs coconut oil

  • cinnamon to taste

Preparation

Step 1


Preheat the oven to 375 degrees.


Step 2


Place the pitted medjool dates in a small bowl of hot water.  Allow them to soak for 5-10 mintues. 


Step 3


Blend the cashews, soaked dates, bananas, flour, milk, baking powder, and salt until smooth.


Step 4


In a bowl, mix the cinnamon, brown sugar, and melted coconut oil until you get a smooth paste. Set aside. 


Step 5


Spray donut tin with non-stick spray and fill about 1/2 the way. Add a small spoonful of the cinnamon swirl mix to the top and swirl with a toothpick. Fill remaining space with batter.


Step 6


Bake for 15 minutes, and check periodically with toothpick. 


Step 7


Remove from oven. Optional: combine a few spoonfuls of powdered sugar and oat milk in a bowl and drizzle on top! Enjoy!
